Rice with Mushrooms

 

Ingredients:

      • Rice
      • Mushrooms
      • Lamb Liver
      • Phyllo dough
      • Dried currants
      • Pine nuts
      • Onions
      • Cumin
      • Red Pepper
      • Cinnamon 
      • Salt
      • Dill
      • Butter and oil

 

Preparation:

 

Chop mushrooms and onions separately. Then cook the mushrooms. In another pot, melt the butter, add oil and pine nuts, brown on low heat for a few minutes, then adding the onions, continue to brown. Add rice to the onions and nuts, continue to sauté. Stir in the mushrooms and then add lamb liver, salt and spices. When the rice is almost cooked all the way, then add the dill. 

Divide the round phyllo dough to eight pieces. Place about a half a cup of the rice mix in the middle of each piece of phyllo and fold. Place the folded phyllos in a crock/casserole dish. Bake in the oven for fifteen minutes.
